I’m in Europe right now. Well, let’s hope to god that I’m in Europe right now, since due to internet magic I’m writing this before I go but it should be posting while I’m there, and I definitely should be there.

Let’s let that sink in for a minute. (The me being in Europe thing – I’m pretty sure we’re all way used to internet magic by now.)

Now that we’re all over the excitement of me being in Europe, lounging in heurigen and eating my weight in saurkraut on a daily basis, let’s move on to squash blossoms.

White bean hummus crostini

(This recipe is part of a post on a shower I threw – you can see more about it here.)

We first had something very similar to this recipe at an engagement party for our friends Jane and Steve. There it was, an unassuming little crostini topped with hummus. An option that I completely overlooked at first, instead making a bee-line for the cheese plate, scallion pancakes, and mac-and-cheese “cupcakes” (Jane throws a pretty good party, it should be said).  But I’m certainly glad Brett encouraged me to try one after he did, because it was an awesome combination of creamy, earthy white bean “hummus,” a bit of peppery arugula, and a hidden layer of tangy balsamic vinegar soaking into the bread.  Surprisingly simple yet hearty and satisfying, it was the first thing I put on the menu for the party, and was sad to find I ended up with almost none of the bean spread to take back with me afterward. Easy cornmeal Parmesan crackers

I love those moments when I realize that something I had previously stashed away in the “too difficult” or “too complex” box should really have always been stored somewhere else, somewhere far more accessible. And not for lack of experience or training, but just because I had completely misconceived it as something more difficult or complex than it actually is. I’ve been trying to put quite a few of those on my Food Lists, and crackers is now another.  For some reason I thought crackers would complicated, with complex equations of ingredients and technique to get just the right crunch, just the right flavor. I’m sure there are some complicated crackers out there, and certainly there are many varieties, but I can tell you right now that I’ve found a pretty awesomely simple basic cracker.
